Classic Method Sparkling Wine “Magy” – Hermau

The vineyards are mostly located on sandy terraced soils facing south of Pianazzola above Chiavenna and in the municipality of Piuro in the nearby Bregaglia. This wine is made from a blend of white grape varieties. Vinified and partially fermented after the harvest, naturally refermented in the bottle. The lack of clarity comes from the deposit of the yeasts from the refermentation, not disgorged. A pairing we recommend is with an asparagus-based dish.
